Reken op 750 gram varkensribben pp.
3 kg voor 4 personen

Voor de marinade van de spare ribs:
1 l ketjap manis
1 l water
2 eetl knoflookpoeder (of 4 à 5 tenen versgeperste knoflook)
2 eetl gemberpoeder
4 eetl sambal oelek
ongeveer een eetl peper en een eetl zout
grillkruiden

(Het lekkerste is het om het vlees een dag van tevoren te marineren).

Doe alle ingrediënten in een grote pan en verwarm de marinade. Roer 'm door met een garde en doe het vlees erin. Laat het zo een paar uur héél zacht sudderen. Haal de spareribs uit de marinade en laat ze wat afkoelen.

Verhit de grill of BBQ.
Trek de vetlaag van de spareribs af. Leg ze dan met de botkant eerst op de hete BBQ. Draai af en toe om tot ze gaar zijn.

Strooi er naar smaak nog wat grillkruiden over en dien op met een gepofte aardappel en een salade en sauzen naar smaak.
